  • 1 tbsp fresh lemon juice
  • 2 tbsp, thinly sliced fresh basil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

  2. Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmeringly hot.
  3. Place the fillets skin-side down in the skillet, pressing gently with a spatula for ten seconds to ensure full skin contact.
  4. Sear undisturbed for 4 to 5 minutes until the skin is golden and ultra-crisp, then flip and cook for an additional 2 minutes until cooked through.
  5. Transfer the fish to a warm plate and lower the skillet heat to medium.
