Cinnamon Roll French Toast Bake

Ingredients

  • For the French Toast
    • 6 slices of brioche bread (or any thick-cut bread), cubed
    • 4 large eggs
    • 1 cup whole milk (or a non-dairy alternative like almond milk)
    • 1/2 cup heavy cream (optional for richness)
    • 1/4 cup granulated sugar
    • 2 tsp vanilla extract
    • 1 tsp ground cinnamon
    • 1/4 tsp ground nutmeg (optional)
  • For the Topping
    • 1/4 cup unsalted butter, melted
    • 1/3 cup packed brown sugar
    • 1 tsp cinnamon
    • 1/4 cup chopped pecans or walnuts (optional)
  • For the Glaze (Cinnamon Roll Twist)
    • 1 cup powdered sugar
    • 2 tbsp cream cheese, softened
    • 1 tbsp milk or cream
    • 1/2 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. Prepare the French Toast Mixture:
    • In a large bowl, whisk together eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and nutmeg until smooth.
  3. Assemble the Bake:
    • Place the cubed bread into the prepared baking dish.
    • Pour the egg mixture evenly over the bread, pressing down gently to ensure all the bread is soaked.
  4. Add the Topping:
    • In a small bowl, mix melted butter, brown sugar, and cinnamon. Stir in nuts if using.
    • Drizzle this mixture over the soaked bread cubes.
  5. Bake:
    • Bake for 35-40 minutes, or until the top is golden and slightly crisp, and the center is set.
  6. Prepare the Glaze:
    • While the bake is cooling slightly, whisk together powdered sugar, cream cheese, milk, and vanilla until smooth and drizzle-worthy.
