1️⃣ Take 0.5 kg of sirloin or a part of the thigh with a bone.
2️⃣ Pour 1.5 liters of cold water over it and place the pot on the stove.
3️⃣ Simmer on low heat for 1 hour.
4️⃣ Then add 1 leek, peeled roots—parsley, celery, and parsnip.
5️⃣ After 20 minutes, add spices to the broth: 2 bay leaves, 5 cloves, 3 allspice berries, and 5 black peppercorns.
6️⃣ Simmer for another 5 minutes and remove from heat. Strain the broth twice to make it clear.
