Cheese Pancakes

Ingredients (7 pieces):

  • 300 g firm, fatty cottage cheese
  • 1 egg
  • 2–3 tbsp almond flour
  • 2 tbsp bran
  • 2 tbsp stevia
  • A pinch of vanilla powder or essence
  • A pinch of salt

Instructions:

  1. Beat the egg until frothy (3 minutes).
  2. Add cottage cheese, almond flour, bran, salt, and vanilla. Mix until smooth.
  3. Shape the dough into balls and flatten them into disks.
  4. Fry in a nonstick pan with coconut oil until golden on both sides.
  5. Serve with sour cream, whipped cream, or berries.
