Keto Berry Cheesecake Parfait

Ingredients

For the Cheesecake Layer:

• 8 oz (225g) cream cheese, softened

• 1/2 cup heavy cream

• 1/4 cup powdered erythritol (or preferred keto sweetener)

• 1/2 tsp vanilla extract

For the Berry Layer:

• 1 cup mixed berries (like strawberries, raspberries, blackberries, and blueberries)

• 1 tbsp powdered erythritol (optional, depending on sweetness preference)

• 1 tbsp lemon juice (optional for extra tartness)

For the Crumble (Optional):

• 1/4 cup almond flour

• 1 tbsp melted butter

• 1 tbsp powdered erythritol

• 1/4 tsp cinnamon (optional)

Instructions

1. Prepare the Cheesecake Layer:

• In a large mixing bowl, combine softened cream cheese, heavy cream, powdered erythritol, and vanilla extract.

• Use a hand mixer to blend until smooth and creamy. Set aside.

2. Prepare the Berry Layer:

• In a small bowl, mix berries with powdered erythritol and lemon juice, if using. Lightly mash with a fork to release some juices and mix well. Set aside.

3. Prepare the Crumble (Optional):

• In a small bowl, mix almond flour, melted butter, powdered erythritol, and cinnamon until it resembles a crumble texture
