Ingredients

  • 1.5 lbs pork belly, sliced into 1/2-inch strips
  • 4 tbsp unsalted butter
  • 2 tbsp chili crisp
  • 2 fresh limes, halved
  • 3 scallions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp flaky sea salt

Instructions

  1. Season pork belly strips generously on both sides with flaky sea salt.
  2. Place a heavy cast-iron skillet over medium-low heat and lay the pork belly flat, pressing down with a parchment-lined press or heavy foil-wrapped pan.
  3. Render and crisp the pork belly for 12 to 15 minutes, flipping once, until the fat is translucent and the edges are deeply golden and crackling.
  4. Transfer the pork belly to a wire rack, leaving 2 tablespoons of rendered pork fat in the pan while discarding the excess.
  5. Increase heat to medium, place lime halves cut-side down in the hot skillet, and sear for 2 minutes until charred and caramelized; set aside.
  6. Melt butter into the pan with the rendered fat, stir in garlic, sliced scallions, and chili crisp, and cook for 60 seconds until fragrant.
  7. Squeeze the charred lime juice into the warm chili crisp butter and spoon generously over the crispy pork belly slices before serving immediately.
