Flaxseed Keto Bread

Ingredients:

  • 1 cup flaxseed meal (150g)
  • 1/4 cup coconut flour (30g)
  • 1/4 cup olive oil (60ml)
  • 5 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup water (120ml)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it lightly.
  2. In a mixing bowl, combine the flaxseed meal, coconut flour, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, then add olive oil and water. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.
  5. Transfer the batter to the prepared loaf pan, spreading it evenly with a spatula.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.
