Keto Zucchini Noodles with Salmon and Broccoli

Ingredients:

  • 2 salmon fillets (200g)
  • 2 medium zucchinis, spiralized (300g)
  • 1 cup broccoli florets (90g)
  • 2 tbsp butter (28g)
  • 1 tbsp olive oil (15g)
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 lemon, juiced
  • Fresh parsley for garnish

Instructions:

  1. Season the salmon fillets with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for 3-4 minutes on each side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add butter and minced garlic. Sauté for 1 minute until fragrant.
  4. Add the broccoli florets and cook for 3-4 minutes until tender.
  5. Add the zucchini noodles to the skillet and cook for 2-3 minutes until just tender.
  6. Squeeze fresh lemon juice over the noodles and toss to combine.
  7. Serve the zucchini noodles topped with salmon fillets and garnish with fresh parsley.
